10 min Merengue cake recipe


I love cooking, but I also love to make simple and tasty things that don’t take too long to cook. One of such recipes is merengue cake.

Here is how you can make merengue in about 5 min without having to whipping up the eggs. You just take one egg white and mix it up with sugar powder. Mix it until you get sort of sweet dough. Then you make small or larger balls out of this dough and put it into your microwave for 2 min. Done!

I made four large merengues, so I had to crush them for this cake. I whipped cream with sugar and lemon juice. Merengue is very sweet, that’s why I added some lemon juice to the cream. I sliced some oranges and bananas and started to for layers of merengue, fruit and whipped cream. I made a cone shaped cake.

I used some cocoa powder and sprinkled it on the top of the merengue cake. It took me 10 min to get this cake done and about another 10 min to make merengue. So, it is a quick recipe.

Home condensed milk easy recipe


This is a very easy home condensed milk recipe. In my country we have a big problem: most food manufacturers use palm oil instead milk in most of the ‘dairy’ products. So, buying a condensed milk, you cannot be sure, you are not just eating a bunch of bad and cholesterol rich fats.

Another big problem is buying real milk even at the farmers’ market. Most of them sell only skim milk or use various tricks to make more milk than their cows can give. That is one reason why I keep goats.

So, here is the condensed milk easy recipe:

Ingredients:

1 quart of milk (do not use the skim one or low fat. I use goat milk, it is higher in fat)

12 ounces of sugar

Optionally you may add:

2 table spoons of starch or flour

Some vanilla

Some coconut crunch

Making of the home condensed milk:

Set the milk to boil and add all the sugar. Stir it untill sugar dissolves. Then set it on a low heat.

I forgot to mention that you need to use a pan with thick walls. You can use any pan, but a thick wall one would work the best. You would not have to be standing and stirring the milk all the time.

It took me about one hour of low heat boiling to make condensed milk. I stirred it once in a while and added few table spoons of sugar along the way. When the milk got a bit thick and after an hour of cooking it, I added vanilla and 1 spoon of starch OR 2 table spoons of all purpose flour and stirred it well. You may do without the starch or flour, but the cooking would take longer and you’d get smaller amount of the condensed milk.

Now, from 1 quart of milk I got about 0,6 quarts of condensed milk. As you may see on the photo, it has a creamy color. To make it thicker, you may set it in a fridge for new hours. You may also add some coconut crunch or cocoa or anything else you can think about to flavor it.

Here is an interesting fact: my home condensed milk is a natural and clean product, as it does not contain any chemical additions. And, it turns out much cheaper than the ready made condensed milk! 0,6 quart cost me only$2, while if I had to buy it, I’d pay at least $4,5.

You can use this condensed milk easy recipe to make cream for your cakes, too. Even though condensed milk is not the most healhy food on earth, the homemade one is much healthier than the one you can get in a can.

I have already rebloged an easy potato waffles recipe on my blog. Finally, I have tried to cook it and I simply love it! I have already shared with you some of my sweet waffles recipes. Here is how I made these potato waffles.

 

Ingredients:

2 small potato, peeled, grated finely
¼ onion, grated finely
2 small eggs, separated
⅓ cup milk
½ cup of all purpose flour

1\2 of teaspoon of baking soda
pinch salt

I have made a mix and used my old waffle pan to bake the potato waffles.

Quick and healthy fruit snack recipe


This is a snack that takes only 3 min to make and it’s very healthy.

Healthy fruit snack recipe ingredients:

Pita bread

1/2 banana

1/2 orange

1 apple

1 table spoon of honey

As you may see, I just chopped all the fruits and placed them on pita. Then I put some honey on the top and rolled pita.

Healthy and easy breakfast: scrambled eggs recipe with ramson


Eggs make my first choice, when it goes about cooking something fast. They make great breakfast, too. Here is a simple scrambled eggs recipe with ramson. Ramson is the first natural and organic green, we get in Ukraine. It grows wild in the woods. People gather and sell it on the market. It is a special type of onion with the garlic flavor. Very peculiar.

4 eggs

4 tea spoons of flour

1/2 tea spoon of salt

Making:

Separate the yolks from the egg white. Beat the yolks with the flour untill they turn white in color. Beat the egg white with the salt to form a foam. Then, gently add the egg white foam into the yolks with flour. Heat up the pan well, put a generous slice of butter and fry your scrambled eggs on it. Or, you may heat up the oven well and place eggs there to get cooked. You may chop some ramson and add into the scrambled eggs. I just served the eggs with it and added some chopped ramson into sour cabbage. So, it’s a really simple and healthy scrambled eggs recipe with ramson. Such a spring kind of breakfast.

Here is a very healthy and easy to make beetroot salad recipe.

Ingredients:

Beetroot

Garlic

Salt

Plant oil

Making of the beetroot salad:

Boil several beetroots in salty water. They have to get cooked well. You can prick them with a fork to see, if they got cooked. Then you cool them, peel them and grate the beetroots. Take few cloves of garlic and grate or press them into the salad. Pour some plant oil (I use sunflower plant oil) into your salad.

This beetroot salad is very healthy. The beetroot contains many vitamins, essential for your health. Garlic helps to clean your vessels and boosts your immune system. Plant oil contains vitamins and antioxidants in it.

There are many variations of this easy beetroot salad possible. You can add some walnuts and prunes into it. If you are not counting calories, you may add mayonnaise instead of plant oil. Quick recipe of oatmeal cookies


Homemade oatmeal cookies are really easy to make. Here is my quick recipe of oatmeal cookies:

Ingredients for oatmeal cookies:

Essential ingredients:

1 cup of oat flakes

2 table spoons of sugar

1 egg

3,5 oz of melted butter

3 table spoons of all purpose flour

Creative Ingredients for oatmeal cookie recipe:

1\2 cup of nuts (walnuts, peanuts, almonds, etc.)

1\2 cup of raisins

Some vanilla or cinnamon

2 table spoons of honey

2 table spoons of chopped dried apricots or dates

Any other dried fruits or seeds, you like.

Making of your oatmeal cookies:

I fry the oat flakes on dry pan. Then I mix them up with butter and an egg, add sugar, spices, honey and dried fruits, nuts or seeds. Add flour. I heat up the oven, take the mix with the spoon and form oatmeal cookies right on the baking tray. Usually, I use baking paper or foil on it. The baking time is around 20 min. That’s it. Your home oatmeal cookies are ready! It is a quick oatmeal cookie recipe. The mix takes about 5 min to make.

Easy Pan Cake Recipe For The Shrove Tuesday

We all love pancakes, so we make them not only for the Shrove Tuesday, which we call in our country “Maslyanitsa”. This means “Fatty or butter week”.

It takes only 5 min to mix pancakes for the Shrove Tue.

Ingredients:

Sour milk or keffir

1 egg

3 table spoons of sugar

1/2 tea spoon of salt

1/2 tea spoon of baking soda

1 cup of flour

 

I just mix all the ingredients up together to attain the right thickness of the mix. I make it pretty thick, as good as home cream.

I have two tricks to make the pancakes more delicious and more feathery.

Pancake tip #1:

I add few table spoons of sour cream into the mix. It makes pan cakes more delicious and feathery.

Pancake tip #2:

I grate 1 apple into the mix. It adds a fruity touch of flavor to pancakes.
