Home condensed milk easy recipe


This is a very easy home condensed milk recipe. In my country we have a big problem: most food manufacturers use palm oil instead milk in most of the ‘dairy’ products. So, buying a condensed milk, you cannot be sure, you are not just eating a bunch of bad and cholesterol rich fats.

Another big problem is buying real milk even at the farmers’ market. Most of them sell only skim milk or use various tricks to make more milk than their cows can give. That is one reason why I keep goats.

So, here is the condensed milk easy recipe:

Ingredients:

1 quart of milk (do not use the skim one or low fat. I use goat milk, it is higher in fat)

12 ounces of sugar

Optionally you may add:

2 table spoons of starch or flour

Some vanilla

Some coconut crunch

Making of the home condensed milk:

Set the milk to boil and add all the sugar. Stir it untill sugar dissolves. Then set it on a low heat.

I forgot to mention that you need to use a pan with thick walls. You can use any pan, but a thick wall one would work the best. You would not have to be standing and stirring the milk all the time.

It took me about one hour of low heat boiling to make condensed milk. I stirred it once in a while and added few table spoons of sugar along the way. When the milk got a bit thick and after an hour of cooking it, I added vanilla and 1 spoon of starch OR 2 table spoons of all purpose flour and stirred it well. You may do without the starch or flour, but the cooking would take longer and you’d get smaller amount of the condensed milk.

Now, from 1 quart of milk I got about 0,6 quarts of condensed milk. As you may see on the photo, it has a creamy color. To make it thicker, you may set it in a fridge for new hours. You may also add some coconut crunch or cocoa or anything else you can think about to flavor it.

Here is an interesting fact: my home condensed milk is a natural and clean product, as it does not contain any chemical additions. And, it turns out much cheaper than the ready made condensed milk! 0,6 quart cost me only$2, while if I had to buy it, I’d pay at least $4,5.

You can use this condensed milk easy recipe to make cream for your cakes, too. Even though condensed milk is not the most healhy food on earth, the homemade one is much healthier than the one you can get in a can.

Bread recipe: how to make your home bread, spending just 30 min on it


When talking of this simple bread recipe, I am not joking to tell that it takes even less than 30 min to make it. Of course, you cannot have it all ready just in half and hour. But, you can do your home choirs, work or play with your kids and occasionally take few minutes to make home bread.

Home bread recipe: Ingredients

1 pint of water or milk

1 table spoon of sugar

1 table spoon of salt

1/2 table spoon of dry yeast

2 pounds of all purpose flour

Warm up the water or milk, add the yeast, salt and sugar. Leave it for 15 min. Then mix in 5 table spoons of flour. Let it stay like that for about 30 min.

bread recipeThat’s the first stage. It all takes up about 5 min of your time.

Then you mix in the rest of flour and knead dough with your hands for 5 min. You keep on adding flour, until the dough stops getting stuck to your hands.

Let it stay in warm place for up to 1 hour. It should rise. Again, you spend about 5 mins of your time to mix the dough.

Then you knead it a bit once more and put it into your baking pan. This time you may also leave it to rise. I don’t. I turn on the oven and set the bread in it. It takes time for the oven to get heated up. This is the time your bread rises in it. Then it gets baked in about 20min.

bread recipeThat is what I got. It does not look ‘dressy’. However, if you leave the dough to rise for the second time in the bread baking pan, you can glaze it with egg yoke, with melted butter or with olive oil. It will look much better, but it will taste the same.

It does not take you all day to make and it fills your house with a very sweet home kind of smell.

 


Homemade hot chocolateHot chocolate does not take long to make. I do not mean that drink you make by mixing some hot water with a stick of refined hot chocolate you got from your supermarket.

Here is my quick recipe:

It takes only 10 min to make your real hot chocolate.

Ingredients:

1 bar of black chocolate

1/3 cup of milk or cream

1 table spoon of butter

Making your hot chocolate:

Melt chocolate in the micro wave. Here is how I do it. I break the bar down to pieces, put them in a bowl and cover up with some food film. I use film to prevent getting the top pieces of chocolate burnt. It gets melted in about 2 mins in microwave.

Then I put the melted chocolate into a small pot, add milk and butter and heat it up on my stove for about 5 mins. It’s ready!

You may add some spices to it, such as cinnamon, for instance. Or, you may add a bit of fruit or milk liqueur, only if you do not serve it to kids. You may also serve hot chocolate covered with wiped cream or berries. I prefer dried cherries.
