Easy Christmas cookie recipe: Cristmas tree cookies


I just cut out a slice of plastic out of a water bottle, then I bended it in the form of a Christmas tree. It’s not the nicest form, but it worked well for me for this Christmas cookie recipe.

It’s a 15 min Christmas cookie recipe. Really easy to make. I wanted to make some special treats for my kids today and they get all excited about the upcoming New Year and Christmas holidays. We have been making Christmas tree handmade toys this week.

So, I decided to shape these Christmas cookie recipe treats in the form of Christmas tree. Here is the recipe and the making:

Ingredients:

– Flour 9 ounces

– Baking soda 1 tea spoon

– Butter 7 ounces

– 1 egg

– a bit salt

– Sugar 9 ounces

Mix up all the ingredients. That’s it. Heat up the oven. Roll the dough on a sheet of baking paper. For this Christmas cookie recipe it has to be rolled thin. Then cut out your cookies, set them in the oven for about 10 min. Top them with melted chocolate. Done.

As you may see, this is a very easy Christmas cookie recipe. The problem was that I did not have the Christmas tree shape to form the cookies. So, I made one in few minutes out of a plastic water bottle.

Thin pancake recipe: we call them in Ukraine Nalisniki


Ukrainians love pan cakes. I have provided few pancake recipes on my blog, such as huge pancakes or apple pan cakes. Here is another one, we call Nalisniki. This word means that the pancake is large and covers all the pan.

Nalisniki pancake recipe:

Milk 1 quart

1 egg

2-3 table spoons of sugar

Salt

5 table spoons of all purpose flour

These are the basic ingredients for these Ukrainian pancakes.

The making:

Add egg to the milk, stir well, then add salt and sugar. Finally, start adding flour spoon by spoon. The mix has to be pretty liquid, but with no blobs. Usually, I mix it with a hand whisk, but you can also use an electric one. Only in this case you would have to add more flour.

The mix has to be as thin sour cream in its texture. Then you heat up the pan, pour in some vegetable oil, take a larger spoon and pour the mix on hot pan. You fry the pan cakes on both sides. That is the basic Nalisniki pan cake Ukrainian recipe.

Home condensed milk easy recipe


This is a very easy home condensed milk recipe. In my country we have a big problem: most food manufacturers use palm oil instead milk in most of the ‘dairy’ products. So, buying a condensed milk, you cannot be sure, you are not just eating a bunch of bad and cholesterol rich fats.

Another big problem is buying real milk even at the farmers’ market. Most of them sell only skim milk or use various tricks to make more milk than their cows can give. That is one reason why I keep goats.

So, here is the condensed milk easy recipe:

Ingredients:

1 quart of milk (do not use the skim one or low fat. I use goat milk, it is higher in fat)

12 ounces of sugar

Optionally you may add:

2 table spoons of starch or flour

Some vanilla

Some coconut crunch

Making of the home condensed milk:

Set the milk to boil and add all the sugar. Stir it untill sugar dissolves. Then set it on a low heat.

I forgot to mention that you need to use a pan with thick walls. You can use any pan, but a thick wall one would work the best. You would not have to be standing and stirring the milk all the time.

It took me about one hour of low heat boiling to make condensed milk. I stirred it once in a while and added few table spoons of sugar along the way. When the milk got a bit thick and after an hour of cooking it, I added vanilla and 1 spoon of starch OR 2 table spoons of all purpose flour and stirred it well. You may do without the starch or flour, but the cooking would take longer and you’d get smaller amount of the condensed milk.

Now, from 1 quart of milk I got about 0,6 quarts of condensed milk. As you may see on the photo, it has a creamy color. To make it thicker, you may set it in a fridge for new hours. You may also add some coconut crunch or cocoa or anything else you can think about to flavor it.

Here is an interesting fact: my home condensed milk is a natural and clean product, as it does not contain any chemical additions. And, it turns out much cheaper than the ready made condensed milk! 0,6 quart cost me only$2, while if I had to buy it, I’d pay at least $4,5.

You can use this condensed milk easy recipe to make cream for your cakes, too. Even though condensed milk is not the most healhy food on earth, the homemade one is much healthier than the one you can get in a can.

My Easter bread


There is a big tradition to make sweet Easter bread in my country. It is called Paskha. Here is my Easter bread:

I used a cake form for this Easter bread. It’s called the King’s Easter bread and it tasty, but not healthy, as it has many eggs and butter in it.

Ukrainian recipes: dumplings


Making dumplings is a very traditional Ukrainian type of food. You can find other Ukrainian recipes in my blog: Borsch, Deruni, Sirniki, Trickled pastries soup. There are the famous Poltava dumplings and here is a quick and easy recipe for them.

1 cup of sour milk or keffir

1 egg

1/2 tea spoon of baking soda

1/2 tea spoon of salt

Mix sour milk with egg and add salt and soda. Mix in the flour.

Leave it to sit in a warm spot for half an hour.

Then you knead it again. You may have to add just a bit more of flour. You roll the dough between your palms to form a long ‘sausage’ stick out of it. Then you cut out small pieces of it. Set the water to boil, add salt throw in your Ukrainian dumplings, once it starts boiling.

Once you get them out, you can serve them hot with butter or sour cream, or you can make a sauce or a dressing for the dumplings.

I fried some chicken liver with onions to serve along with these.

Trickled pastries soup recipe


Ukrainian trickled pastries soup recipe is easy. You just cook regular soup. I made a chicken soup. I made a chicken broth, then added few potatoes, one carrot, one onion, some greens and made my trickled pastries.

To make them I mixed one egg with enough four to make a thick dough.

Then, when your soup is boiling, you pick little pieces of pastry and throw them into your soup.

Easy huge pancake recipe


As a mother of two young girls I have very little time to give to cooking. Still, we all love pancakes, but it takes time to make and fry them. That is why I have made some huge pancakes one of these days. They save you time and trouble of baking them. Take a look at my huge pancake recipe.

Huge pancake ingredients:

1 pint of sour milk

1 egg

5 table spoons of sugar

1/4 tea spoon of salt

1/2 tea spoon of baking soda

3 oz of soft cheese or curd

10 table spoons of flour (or more)

Huge pancake making:

Basically, I mix all the ingredients up, except for the curd. When the mix is ready, I crush curd with the fork or grind soft cheese and add it in. Now, we are ready to bake the huge pancakes.

I heat up the pan well and pour enough of mix to cover up the entire pan. I also make a pretty thick layer of the dough. Then I put a top over the pan. This helps the huge pancakes to get cooked faster and better.

I serve these huge pancakes with honey or sour cream. Of course, you can use the same mix recipe for making regular pancakes. But, baking large size pancakes saves you time.

This way, you can make just one huge pancake for every family member! You can also get two pans on the stove and  double cut  the time, spent on baking them.

Bread recipe: how to make your home bread, spending just 30 min on it


When talking of this simple bread recipe, I am not joking to tell that it takes even less than 30 min to make it. Of course, you cannot have it all ready just in half and hour. But, you can do your home choirs, work or play with your kids and occasionally take few minutes to make home bread.

1 pint of water or milk

1 table spoon of sugar

1 table spoon of salt

1/2 table spoon of dry yeast

2 pounds of all purpose flour

Warm up the water or milk, add the yeast, salt and sugar. Leave it for 15 min. Then mix in 5 table spoons of flour. Let it stay like that for about 30 min.

bread recipeThat’s the first stage. It all takes up about 5 min of your time.

Then you mix in the rest of flour and knead dough with your hands for 5 min. You keep on adding flour, until the dough stops getting stuck to your hands.

Let it stay in warm place for up to 1 hour. It should rise. Again, you spend about 5 mins of your time to mix the dough.

Then you knead it a bit once more and put it into your baking pan. This time you may also leave it to rise. I don’t. I turn on the oven and set the bread in it. It takes time for the oven to get heated up. This is the time your bread rises in it. Then it gets baked in about 20min.

bread recipeThat is what I got. It does not look ‘dressy’. However, if you leave the dough to rise for the second time in the bread baking pan, you can glaze it with egg yoke, with melted butter or with olive oil. It will look much better, but it will taste the same.
