Home condensed milk easy recipe


This is a very easy home condensed milk recipe. In my country we have a big problem: most food manufacturers use palm oil instead milk in most of the ‘dairy’ products. So, buying a condensed milk, you cannot be sure, you are not just eating a bunch of bad and cholesterol rich fats.

Another big problem is buying real milk even at the farmers’ market. Most of them sell only skim milk or use various tricks to make more milk than their cows can give. That is one reason why I keep goats.

So, here is the condensed milk easy recipe:

Ingredients:

1 quart of milk (do not use the skim one or low fat. I use goat milk, it is higher in fat)

12 ounces of sugar

Optionally you may add:

2 table spoons of starch or flour

Some vanilla

Some coconut crunch

Making of the home condensed milk:

Set the milk to boil and add all the sugar. Stir it untill sugar dissolves. Then set it on a low heat.

I forgot to mention that you need to use a pan with thick walls. You can use any pan, but a thick wall one would work the best. You would not have to be standing and stirring the milk all the time.

It took me about one hour of low heat boiling to make condensed milk. I stirred it once in a while and added few table spoons of sugar along the way. When the milk got a bit thick and after an hour of cooking it, I added vanilla and 1 spoon of starch OR 2 table spoons of all purpose flour and stirred it well. You may do without the starch or flour, but the cooking would take longer and you’d get smaller amount of the condensed milk.

Now, from 1 quart of milk I got about 0,6 quarts of condensed milk. As you may see on the photo, it has a creamy color. To make it thicker, you may set it in a fridge for new hours. You may also add some coconut crunch or cocoa or anything else you can think about to flavor it.

Here is an interesting fact: my home condensed milk is a natural and clean product, as it does not contain any chemical additions. And, it turns out much cheaper than the ready made condensed milk! 0,6 quart cost me only$2, while if I had to buy it, I’d pay at least $4,5.

You can use this condensed milk easy recipe to make cream for your cakes, too. Even though condensed milk is not the most healhy food on earth, the homemade one is much healthier than the one you can get in a can.

Easy potato waffles recipe


I have already rebloged an easy potato waffles recipe on my blog. Finally, I have tried to cook it and I simply love it! I have already shared with you some of my sweet waffles recipes. Here is how I made these potato waffles.

 

Ingredients:

2 small potato, peeled, grated finely
¼ onion, grated finely
2 small eggs, separated
⅓ cup milk
½ cup of all purpose flour

1\2 of teaspoon of baking soda
pinch salt

I have made a mix and used my old waffle pan to bake the potato waffles.

Green day, green soup: Ukrainian nettle soup recipe


The weather forecasts predicted a rainy day today, but it turned out to be sunny and green. So, I cooked another one of traditional Ukrainian soups, the nettle soup.

This green soup is very healthy and rich with vitamins. Stinging nettle along with ramson are the first greens in Ukraine. And, they are free! We use only the first, young and tender nettle leaves. They almost sting free. Still, I used rubber gloves to pick the nettle for my green soup. I have nice young bush of it growing right in my yard.

Here is how you make this Ukrainian nettle green soup:

Make a broth. I used both chicken and hot dogs for it. Then you add some potatoes, carrots and onions. You may also add 2 chopped garlic cloves into the broth. And, add rice. I added 3 table spoons of it. Let the whole thing boil till rice and potatoes get cooked. Then, at the very last moment you add some chopped nettle and green onions. I also add a table spoon of sunflower oil at the very end of it. I turn the heat off and let the green soup stay for half an hour to get the nettle cooked.

This Ukrainian nettle green soup should be served hot with sour cream.

Easy recipe: stuffed eggs with salmon


This is a delicious and tasty snack that takes you only 10 min to make.

I already had a salted salmon I made at home. So, I chopped it into pieces. I boiled eggs, peeled them and cut into halves. Then I removed the yolks. I mixed the yolks with chopped salmon and homemade mayonnaise. The stuffing is ready. I stuffed the eggs and served them on green ramson leaves. That’s my easy eggs stuffed with salmon recipe.

 

Ukrainian recipes: dumplings


Making dumplings is a very traditional Ukrainian type of food. You can find other Ukrainian recipes in my blog: Borsch, Deruni, Sirniki, Trickled pastries soup. There are the famous Poltava dumplings and here is a quick and easy recipe for them.

1 cup of sour milk or keffir

1 egg

1/2 tea spoon of baking soda

1/2 tea spoon of salt

Mix sour milk with egg and add salt and soda. Mix in the flour.

Leave it to sit in a warm spot for half an hour.

Then you knead it again. You may have to add just a bit more of flour. You roll the dough between your palms to form a long ‘sausage’ stick out of it. Then you cut out small pieces of it. Set the water to boil, add salt throw in your Ukrainian dumplings, once it starts boiling.

Once you get them out, you can serve them hot with butter or sour cream, or you can make a sauce or a dressing for the dumplings.

I fried some chicken liver with onions to serve along with these.

Quick and healthy fruit snack recipe


This is a snack that takes only 3 min to make and it’s very healthy.

Pita bread

1/2 banana

1/2 orange

1 apple

1 table spoon of honey

As you may see, I just chopped all the fruits and placed them on pita. Then I put some honey on the top and rolled pita.

Healthy and easy breakfast: scrambled eggs recipe with ramson


Eggs make my first choice, when it goes about cooking something fast. They make great breakfast, too. Here is a simple scrambled eggs recipe with ramson. Ramson is the first natural and organic green, we get in Ukraine. It grows wild in the woods. People gather and sell it on the market. It is a special type of onion with the garlic flavor. Very peculiar.

4 eggs

4 tea spoons of flour

1/2 tea spoon of salt

Making:

Separate the yolks from the egg white. Beat the yolks with the flour untill they turn white in color. Beat the egg white with the salt to form a foam. Then, gently add the egg white foam into the yolks with flour. Heat up the pan well, put a generous slice of butter and fry your scrambled eggs on it. Or, you may heat up the oven well and place eggs there to get cooked. You may chop some ramson and add into the scrambled eggs. I just served the eggs with it and added some chopped ramson into sour cabbage. So, it’s a really simple and healthy scrambled eggs recipe with ramson. Such a spring kind of breakfast.

Trickled pastries soup recipe


Ukrainian trickled pastries soup recipe is easy. You just cook regular soup. I made a chicken soup. I made a chicken broth, then added few potatoes, one carrot, one onion, some greens and made my trickled pastries.

To make them I mixed one egg with enough four to make a thick dough.

Then, when your soup is boiling, you pick little pieces of pastry and throw them into your soup.
