Thin pancake recipe: we call them in Ukraine Nalisniki


Ukrainians love pan cakes. I have provided few pancake recipes on my blog, such as huge pancakes or apple pan cakes. Here is another one, we call Nalisniki. This word means that the pancake is large and covers all the pan.

Nalisniki pancake recipe:

Milk 1 quart

1 egg

2-3 table spoons of sugar

Salt

5 table spoons of all purpose flour

These are the basic ingredients for these Ukrainian pancakes.

The making:

Add egg to the milk, stir well, then add salt and sugar. Finally, start adding flour spoon by spoon. The mix has to be pretty liquid, but with no blobs. Usually, I mix it with a hand whisk, but you can also use an electric one. Only in this case you would have to add more flour.

The mix has to be as thin sour cream in its texture. Then you heat up the pan, pour in some vegetable oil, take a larger spoon and pour the mix on hot pan. You fry the pan cakes on both sides. That is the basic Nalisniki pan cake Ukrainian recipe.

Quick and healthy fruit snack recipe


This is a snack that takes only 3 min to make and it’s very healthy.

Healthy fruit snack recipe ingredients:

Pita bread

1/2 banana

1/2 orange

1 apple

1 table spoon of honey

As you may see, I just chopped all the fruits and placed them on pita. Then I put some honey on the top and rolled pita.

Healthy and easy breakfast: scrambled eggs recipe with ramson


Eggs make my first choice, when it goes about cooking something fast. They make great breakfast, too. Here is a simple scrambled eggs recipe with ramson. Ramson is the first natural and organic green, we get in Ukraine. It grows wild in the woods. People gather and sell it on the market. It is a special type of onion with the garlic flavor. Very peculiar.

Ingredients for scrambled eggs recipe with ramson:

4 eggs

4 tea spoons of flour

1/2 tea spoon of salt

Ramson

Making:

Separate the yolks from the egg white. Beat the yolks with the flour untill they turn white in color. Beat the egg white with the salt to form a foam. Then, gently add the egg white foam into the yolks with flour. Heat up the pan well, put a generous slice of butter and fry your scrambled eggs on it. Or, you may heat up the oven well and place eggs there to get cooked. You may chop some ramson and add into the scrambled eggs. I just served the eggs with it and added some chopped ramson into sour cabbage. So, it’s a really simple and healthy scrambled eggs recipe with ramson. Such a spring kind of breakfast.

Quick recipe of oatmeal cookies


Homemade oatmeal cookies are really easy to make. Here is my quick recipe of oatmeal cookies:

Ingredients for oatmeal cookies:

Essential ingredients:

1 cup of oat flakes

2 table spoons of sugar

1 egg

3,5 oz of melted butter

3 table spoons of all purpose flour

Creative Ingredients for oatmeal cookie recipe:

1\2 cup of nuts (walnuts, peanuts, almonds, etc.)

1\2 cup of raisins

Some vanilla or cinnamon

2 table spoons of honey

2 table spoons of chopped dried apricots or dates

Any other dried fruits or seeds, you like.

Making of your oatmeal cookies:

I fry the oat flakes on dry pan. Then I mix them up with butter and an egg, add sugar, spices, honey and dried fruits, nuts or seeds. Add flour. I heat up the oven, take the mix with the spoon and form oatmeal cookies right on the baking tray. Usually, I use baking paper or foil on it. The baking time is around 20 min. That’s it. Your home oatmeal cookies are ready! It is a quick oatmeal cookie recipe. The mix takes about 5 min to make.

Ukrainian cuisine: I call them ‘cheese cakes’, the original name is “sirniki”


This is fast and healthy breakfast recipe for busy moms. These cheese cakes or cheese pancakes taste great and are easy to make.

I use soft cheese or curd to make them. Mixing takes only 3 min, especially if you have a food processor.

Ingredients:

Soft cheese or curd 7 oz

2 table spoons of sugar

Salt

2 table spoons of semolina (if you have it)

If not, just take 3-4 table spoons of all purpose flour

1-2 eggs

1 table spoon of soft butter

1 banana

Making of these cheese cakes:

You should mix all things together. It is easier to do in a food processor. But, you can do it using a fork in a large bowl. If you do it manually, crush banana first, then mix everything up and crush well together.

Now, set a flat plate covered with flour. Take some mix, roll a ball about of flatten it between your palms to make a cake. Set both sides of this little cake into the flour and leave it on the plate. You should roll all the small cakes in this manner and set both sides of them in the flour.

Cheese cakes just before you fry them.

That’s what you get. Then you set a pan to heat and pour some plant oil in it. You fry the cheese cakes or Sirniki on the pan, untill the get golden crust. You serve them hot with some sour cream or jelly.

The original recipe of sirniki or cheese cakes does not include bananas. I add it, and it tastes even better.

The curd or soft cheese is a very healthy thing for a breakfast. You can get it low in fat, too. This sirniki or cheese cake recipe does not take long to make and it is delicious. All kids in Ukraine love them.

Easy Pan Cake Recipe For The Shrove Tuesday


Easy pan cake recipe

We all love pancakes, so we make them not only for the Shrove Tuesday, which we call in our country “Maslyanitsa”. This means “Fatty or butter week”.

It takes only 5 min to mix pancakes for the Shrove Tue.

Ingredients:

Sour milk or keffir

1 egg

3 table spoons of sugar

1/2 tea spoon of salt

1/2 tea spoon of baking soda

1 cup of flour

 

I just mix all the ingredients up together to attain the right thickness of the mix. I make it pretty thick, as good as home cream.

I have two tricks to make the pancakes more delicious and more feathery.

Pancake tip #1:

I add few table spoons of sour cream into the mix. It makes pan cakes more delicious and feathery.

Pancake tip #2:

I grate 1 apple into the mix. It adds a fruity touch of flavor to pancakes.

Quick and healthy salad recipe


Nice looking salad recipeEveryone knows salads are the healthiest things you can eat. They help you to stay healthy, energized and fit. They supply you with vitamins and antioxidants. And, they are easy to make, as fresh salads do not require any cooking.

However, there one thing I dislike about making salads. That is grating some of their ingredients, such as carrots, for instance. Carrots are good for my health, I know that. But I really detaste grating them or eating roughly chopped pieces of carrots.That is one reason why I got my food processor. It does all the grating for me:)

But, what if you need to grate just one half of carrot? Washing and cleaning food processor would only be a waste of time in this case. So, I got a better idea on how to make nice looking, nice tasting and healthy salads and avoid grating.

Now I use my potato peeling knife for carrots. I do not only peel carrots with that knife. I also slice them with it. If you do not press hard, you get perfect thin and long slices of carrots. They look much better in you salad, too.

There is one con to mention, though. The core of carrots cannot be sliced so easily. So, I just either leave it for the soup I cook, or throw it away.

There is another great salad combination, for which you can use potato peeler. If you take purple cabbage and daikon, you get amazingly beautiful and healthy salad. You chop the cabbage with the regular knife. Then you peel daikon and start slicing it with the potato knife. You get long white slices to match your purple cabbage. The match each other just beautifully and look great and dressy.

 

Quick and easy cookies or waffle recipe


Quick waffle recipeI use this recipe when my kids have company over and I have nothing ready to serve them with their tea.

Ingredietns:

2 eggs

1/2 cup of sugar

3,5 ounces  of butter or margarin

4 ounces of sour cream or keffir

Baking soda 1/2 of tea spoon

A bit of salt

3 cups of flour

Optional:

A handfull of walnuts or/and raisins

For this quick waffle recipe should melt the butter (I do it in microwave) and mix it up with eggs, baking soda, sugar and sour cream. Then you add flour. Here is what you get.

Quick recipe of waffle mix

It should be as a thick cream. Too soft to handle with fingers. But Ok to take withe spoon.

You may bake the waffles or cookies as I call them in your electric waffler. I love ‘old things’, so I use this:

Once it gets heated up, it takes only few minutes to bake a full plate of small waffles. And, they look nice, too.
